Micro is where food lab design gets unforgiving. Pathogen environmental monitoring, indicator testing, and shelf-life studies each want their own zone, and samples must move in one direction — never back across clean areas. Epoxy resin is the default for food QC labs — it shrugs off the acids, bases, solvents, and repeated sanitization these labs use daily, and it tolerates the heat of flame work. Phenolic resin costs less and performs well where chemical exposure is moderate. Stainless steel makes sense for wash-down adjacency and sample receiving areas. Most food labs mix materials by room: epoxy at the chemistry bench, phenolic in instrument rooms, stainless at intake.
Separation and airflow. Micro work needs physical separation between sample prep, incubation, and pathogen work — ideally separate rooms with their own casework runs — plus a biological safety cabinet or laminar flow station, cleanable seamless surfaces, and storage for media and consumables. The layout must let dirty and clean workflows move in one direction without crossing.
